SPICE, SPICE BABY

They say variety is the spice of life. But let's be honest, spices are really the spice of life. Pepper, oregano, vanilla. . . parsley, sage, rosemary and thyme. In this hour of To the Best of Our Knowledge, things get spicy. We'll travel to the Spice Islands to taste fresh nutmeg. And go just South of the border for salsa recipes that will knock your socks off. And, the spice that started it all. We'll look at the history of salt.

 

 

SEGMENT 1:

Aaron Sanchez hosts a show on the Food Network and has a restaurant, Paladar, in Manhattan. He's the author of "La Comida del Barrio: Latin American Cooking across the United States." Sanchez gives Anne Strainchamps a lesson in making and appreciating salsas. Also, Anne talks with Bill Penzey of Penzeys Spices about vanilla.

SEGMENT 2:

Mark Kurlansky talks with Jim Fleming about the long and dramatic history of salt. That's the subject of his book "Salt: A World History." Also, Corby Kummer is the food writer for The Atlantic Monthly. He talks with Anne Strainchamps about Flur de Sel, a gourmet sea salt imported from France. And Bill Penzey of Penzeys Spices tells Anne about fennel seed.

SEGMENT 3:

Jack Turner is the author of "Spice: The History of a Temptation." He tells Jim Fleming that spices seemed magical in the middle ages and it was only when they became common and cheap in the 17th & 18th centuries that people began to accept them as food. Also, Pat Willard is the author of "Secrets of Saffron." She tells Steve Paulson how you harvest saffron and why it's more than a flavoring. And spice maven Bill Penzey tells Anne Strainchamps about another exotic spice: nutmeg.
