Chicken Kale Salad With Apples & Cheddar

  • 1 bunch Kale, stems removed and torn into bite-size pieces (about 9 cups)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 2 tablespoon Sherry vinegar
  • ¼ cup Extra-virgin olive oil
  • Kosher salt
  • Ground black pepper
  • 1 Apple, cut into matchsticks (about 1½ cups)
  • 3/4 cup White cheddar cheese
  • 1½ cups Shredded rotisserie chicken
  • ½ cup Pumpkin seeds

In a small bowl, whisk together Dijon mustard, honey, and sherry vinegar. Slowly add olive oil, whisking constantly. Season with salt and pepper.

In a large bowl, toss kale with dressing, using your hands to massage the kale until tender, 3 minutes. Toss in apple, cheddar, and chicken.
