  • Tracy 2/27/08: "I was at the local 'regular joe' supermarket, and was behind a mom with two young children. They were buying all processed foods, boxed macaroni and cheese and frozen pizzas. I can't judge a mom who's tired and wants an easy meal for her family, but I'm not sure it's always lack of food choices and availability that make people choose 'poor' foods. Rather, it seems to be shortage of time and lack of knowledge of how to prepare a quick, healthy meal. We don't have to buy all organic produce or peruse the local farmer's market to prepare a healthy, inexpensive meal. How can we teach people that quick and healthy meals don't have to come from a box?"
