Cheesemaking has a long and storied tradition in Wisconsin, but it's also an ever-evolving tradition. In honor of the opening of Green County's Cheese Days, we'll talk to one homegrown and internationally acclaimed cheesemaker, Sid Cook of Carr Valley Cheese Company, about his move from commodity, to specialty, to original cheeses. We'll also be joined by Carol Chen of the Center for Dairy Research who will lead us through the tasty process of "cheese profiling."
