- 12 Chicken thighs and drumsticks (about 3 1/2 lb.)
- Cooking spray
- 1 teaspoon Cumin
- ½ teaspoon Cardamom
- ½ teaspoon Cinnamon
- 1 teaspoon Salt
- ½ teaspoon Pepper
- 3½ cups Couscous, cooked
- ½ cup Roasted peppers, chopped
- ½ cup Sliced almonds
- 1/3 cup Golden raisins
- 2 Green onions, finely chopped
- Arrange chicken on large rimmed baking sheet; spray with cooking spray. Sprinkle with mixture of cumin, cardamom, cinnamon, salt, and pepper.
- Roast in 475 degrees F oven 35 minutes or until chicken is cooked (165 degrees F).
- Toss couscous with roasted peppers, almonds, raisins, and green onions. Serve chicken on couscous.
