| Herb Roasted New Potatoes |
Soy Marinade for Veggies |
INGREDIENTS:
2 lbs. new potatoes (if small do not cut them)
1 sachet (put all ingredients into the filter and tie up with string):
1 large coffee filter (or cheese cloth)
1 shallot sliced thin (no need to peel)
2 cloves crushed garlic (no need to peel)
1 bay leaf
2 sprigs thyme
1 teaspoon black peppercorns
Kosher salt
Water to cover |
INGREDIENTS:
1 cup soy sauce
1 cup water
¼ cup rice wine vinegar
1 teaspoon sesame oil
1 teaspoon Siracha hot sauce or Thai hot chili oil
3-4 Tablespoons honey
METHOD:
Whisk all of the ingredients together. Marinade the vegetables that you are going to grill for about one hour. |
METHOD:
Wash and place the potatoes into a large pot. Cover the potatoes with cold water and add the sachet. Bring to a boil and add enough salt to make the water taste like the ocean. Reduce the heat to almost off and let the potatoes slow cook until just fork tender; this takes about an hour. (If the potatoes fall apart they are over cooked.) Drain and dry the potatoes. Heat an oven-safe pan on high and add 3-4 Tablespoons of butter and the potatoes. Place the pan into a 400-475° oven for 10 minutes. Drain the butter and toss the potatoes with chopped chives, parsley, rosemary and thyme. |
