LEAH'S ZUCCHINI REUBEN
4 Small Zucchinis
4 Slices Rye bread (fat free whole grain)
2 Tbs Fat-free vinaigrette dressing
2 Tbs Fat-free thousand island salad dressing
4 Slices Light swiss cheese
1/2 Cup Sauerkraut
Slice zucchini into thin slices length wise. In a bowl, marinate slices in vinaigrette. Broil zucchini for 5 minutes until soft but not crisp. Assemble sandwiches with thousdand island dressing, sauerkraut, and zuchhini on the rye bread. Coat skillet with fat free cooking spray. Cook sandwich until golden brown on each side.
