BROILED PINEAPPLE MEDALLIONS
1 20 oz can Sliced pineapples, drained (10 rings)
10 Maraschino cherries, drained and rinsed
3½ Tbs Light brown sugar
5 tsp Reduced-calorie stick margarine, melted
Ground cinnamon to taste
Arrange pineapple rings in a single layer in a 9 x 13 inch baking pan with sides. Place a cherry in the center of each ring. Sprinkle each medallion with roughly 1 teaspoon of light brown sugar. Drizzle the melted margarine over the medallions and dust with the cinnamon.
Place the pan 5 inches from the broiler and broil (with the oven door cracked open) for 5 minutes or until top bubbles. Enjoy!
