- ½ Tbs Olive oil
- 3 Small Corn tortillas, cut into strips
- 4 Eggs, beaten
- 1 Green chili, diced*
- 1 oz Tomatillo salsa
- 3 Tbs Cilantro
- Salt and pepper to taste
- 1 Small Roma tomato, diced
- Sour cream to garnish
- Heat oil in large skillet.
- Add tortilla strips and cook until softened. Add the eggs, green chili, salsa and cilantro.
- Cook for about five minutes until set.
- Season with salt and pepper.
- Top with diced tomatoes and a dollop of sour cream. Enjoy!
