Chuck’s Garden Soup

  • 2 Beets, chopped small
  • 1 Potato, chopped small
  • 1 Onion, chopped small
  • 1 Tomato, chopped small
  • 1 Jalapeno, chopped
  • 1 Cup Potatoes, cut bite size
  • 2 Cups Green beans, cut bite size
  • 2 Banana peppers, cut bite size
  • 20 Basil leaves, chopped
  • 3 Tomatoes, chopped small
  • 1 Cucumber, seeded and cut in small pieces
  • Cheese to top
  1. Cook the beets, potato, onion, tomato and jalapeno in about 2 cups water for about 60 minutes in microwave at full power.
  2. Mash everything together but not too much.
  3. Add potatoes and cook 5 minutes.
  4. Add green beans and banana peppers, cook 5 minutes or until done.
  5. Add the three tomatoes and basil, let sit for a few minutes to allow tomatoes to warm, put in bowls and top with cucumber and cheese.
  6. Enjoy.
