Cold Noodles With Peanut Sauce

  • 9 oz Linguine noodles
  • 2 Tbs Natural peanut butter
  • 2 tsp Fresh lime juice
  • 2 tsp Soy sauce
  • 1 pinch Cayenne pepper
  • 1/4 tsp Black pepper
  • 1/4 tsp Coriander seed
  • Hot water, as needed
  • 1 Med Red bell pepper, diced

Noodles:

  1. Cook noodles as directed on package. Rinse noodles in cold water. Drain noodles, and refrigerate in large bowl for 30 minutes.

Sauce:

  1. In separate bowl, combine natural peanut butter, lime juice, soy sauce, cayenne pepper, black pepper and coriander. Add small amounts of hot water just until mixture stirs easily with fork. Stir until sauce has uniform consistency.
  2. Top noodles with a small dollop (about 1 Tbsp) of sauce. Garnish with diced red peppers, and serve.
