Ingredients
- 8 ounces pasta of choice
- 1 Tablespoon chopped fresh basil
- 0-12 medium grape tomatoes (cut into halves)
- 8 ounces brie (cut into small pieces)
- 2 teaspoons minced garlic
- 2 Tablespoons fresh lemon juice
- 1/2 cup milk
- Salt/pepper (to taste)
- 2 Tablespoons nutritional yeast (optional)
- 1-2 cups spinach
- 1 cup protein of choice (chicken, steak, shrimp, tofu, etc.)

Cook the pasta according to directions, then drain and set aside. While the pasta is cooking, chop the basil, slice the tomatoes, and cut the brie into small pieces.
Melt the brie in a saucepan or sauté pan with garlic, lemon juice, and 1/4 cup of milk over medium heat for 5-7 minutes.
Add in the remaining milk and salt/pepper to taste. Whisk in the nutritional yeast (optional) and tomatoes, cooking for another 3-5 minutes (or until the brie has fully melted).
Remove from heat and stir in the spinach. Add in the pasta and chopped basil. Stir until evenly coated, add your favorite protein, and enjoy!
