- 1-2 Tbs Olive oil
- 1 Cup Diced onions
- 1-2 Cloves Garlic, diced
- 1 Large Container Plain, nonfat, Greek yogurt
- 1-2 Pinches Kosher salt
- ½ tsp Ground white pepper
- Heat oil to medium or medium high in low wide frying pan.
- Add onions with 1-2 pinches of salt.
- Stirring occasionally, caramelize onions (most of them should be brown but not black).
- During the final minute of cooking, stir in the garlic.
- Turn heat off and let cool to room temperature (About 10 minutes).
- Once cool, combine onion and garlic mixture with yogurt, pepper and add a pinch or two more of salt.
- Mix thoroughly and refrigerate for several hours, preferably overnight.
- Stir again in the morning, this is when the rich brown color usually appears at its best.
- Keep refrigerated until ready to serve then mix again.
