- Pizza dough
- Vegetable oil cooking spray
- 1 Tbs Cornmeal
- 1 Pound Red potatoes, scrubbed, unpeeled
- ½ Pound Yellow onions, pared, sliced paper thin
- 1 Clove Garlic, finely minced
- ½ tsp Fresh sage leaves, minced
- ½ tsp Ground black pepper
- ½ tsp Salt
- Preheat oven to 400 degrees.
- Roll out pizza dough on floured work surface to fit a 12 inch, round pizza pan. Spray the pan lightly with cooking spray. Fit the pizza dough on the pan and dust with cornmeal.
- Dry potatoes thoroughly. Slice as thinly as possible into rounds. Place potatoes, thinly sliced onions, minced garlic and sage in a bowl. Toss with rubber spatula to mix well. Spray the pizza crust lightly with cooking spray and layer the potato-onion mixture evenly across. Sprinkle with salt and black pepper.
- Bake for 35-40 minutes, until potatoes are cooked through and golden brown.* Remove from oven and let rest for a minute or two. Slice and serve!

Cooking Tips
*During the last 15 minutes of cooking, if the potatoes brown too fast, spray a 12 inch circle of aluminum foil with vegetable oil cooking spray, and lay lightly on top of the pizza, sprayed-side down.
