Ingredients:
- 2 cups brown or white rice
- 2 cups fresh sweet corn (whole)
- ¼ cup dried raisins
- ¼ cup fresh parsley
- 1 cup olive oil
- Salt to taste

- Wash rice and warm in microwave for approximately 6 minutes to dry up water.
- Bring a pot of water to a boil and add some salt to it.
- Add rice to pot and cook stirring frequently to avoid sticking and burning.
- Once all the water is absorbed, add whole corn to it along with the raisin and cover pot tightly and cook rice to perfection – well done.
- Simmer and serve hot or cold with any fish or meat sauce or stew.
- Garnish with fresh parsley.
