Recipe includes zucchini, other veggies, beef and cheese

On last Friday’s Garden Talk, I mentioned a recipe I like that involves zucchini — it’s called Zubeefy!

Ingredients

  • 2 medium zucchini, diced, salted, peppered and fried in olive oil
  • 3 small onions, sliced and fried in butter
  • 2 1/2 pounds ground chuck browned with salt, touch of garlic and oregano; pour off any grease
  • 1 small can tomato paste
  • 1 c. cottage cheese
  • 2 c. Mozzarella cheese

Directions

Prepare the first three items according to directions above. Then add the tomato paste to the beef mixture. Stir the beef, onion, zucchini and cottage cheese together. Put into a 2-quart casserole dish and top with cheese. Bake the dish at 350 degrees for 40-45 minutes until it’s heated through and cheese is melted.
